So there are many things that people have pondered since the dawn of time. Chocolate or strawberry? Scrunch or fold? Is there an afterlife? Well, I have one more simple question – What is the difference between bearnaise and hollandaise sauce? I’m sure I’m not the only one who wonders, although that could just be the narcissism kicking in, or that thinks they taste very similar, although that could just be my concrete palate talking. So thanks to our faithful friend wikipedia (the source of all truth), here’s the lowdown.
Bearnaise – simply a sauce of butter and egg flavoured with tarragon, shallots and chervil and cooked in wine and vinegar to make a glaze. Simple.
Hollandaise – simply and emulsion of butter, egg yolks and lemon juice. Simple.
At least we can all stop pondering this one and move on to some other things.
